Spicy Harissa Chicken Skewers

Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/4 cup harissa paste
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 red onion, cut into chunks
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
Instructions
- In a large bowl, combine the harissa paste, olive oil, cumin, paprika, salt, and black pepper. Add the chicken pieces and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
- Preheat a grill or grill pan over medium-high heat. Thread the marinated chicken, red onion, and bell peppers onto skewers.
- Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
