Spicy Hungarian Goulash (Gulyás)

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 large onions, chopped
  • 3 cloves garlic, minced
  • 2 tbsp Hungarian sweet paprika
  • 1 tsp caraway seeds
  • 2 bay leaves
  • 4 cups beef broth
  • 2 large potatoes, peeled and diced
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the beef over medium-high heat.
  2. Add the onions and garlic, and cook until softened.
  3. Stir in the paprika, caraway seeds, and bay leaves, then pour in the beef broth.
  4. Simmer for 1.5 hours, then add the potatoes and continue cooking until the beef and potatoes are tender.
  5. Season with salt and pepper to taste before serving.
