Spicy Jordanian Lentil Patties (كبة العدس الحارة)

Ingredients

  • 2 cups dried red lentils
  • 1 onion, finely chopped
  • 3 cloves garlic, minced

  • 1 teaspoon coriander
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup chopped fresh parsley
  • Salt to taste

Instructions

  1. Rinse the lentils and place them in a pot with 4 cups of water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the lentils are soft. Drain any excess water.
  2. In a large bowl, mash the cooked lentils with a fork or potato masher.
  3. Add the chopped onion, minced garlic, cumin, coriander, cayenne pepper, chopped parsley, and salt to the mashed lentils. Mix well to combine all the ingredients.
  4. Form the lentil mixture into patties, about 1/2 inch thick.
  5. Heat vegetable oil in a large skillet over medium heat. Fry the lentil patties for 3-4 minutes on each side, until golden brown and crispy.
  6. Remove the patties from the skillet and place them on a paper towel to drain any excess oil.
