Ingredients
- 2 cups red lentils, rinsed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- 6 cups vegetable broth
- 2 tomatoes, diced
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Stir in the ground cumin, ground coriander, and cayenne pepper, and cook for 1-2 minutes to toast the spices.
- Add the rinsed red lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 30 minutes, or until the lentils are tender.
- Add the diced tomatoes, and continue to simmer for an additional 10 minutes.
- Season with salt and black pepper to taste.
