Spicy Jordanian Lentil Soup (شوربة العدس الحارة الأردنية)

Ingredients

  • 2 cups red lentils, rinsed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • 6 cups vegetable broth
  • 2 tomatoes, diced
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Stir in the ground cumin, ground coriander, and cayenne pepper, and cook for 1-2 minutes to toast the spices.
  4. Add the rinsed red lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 30 minutes, or until the lentils are tender.
  5. Add the diced tomatoes, and continue to simmer for an additional 10 minutes.
  6. Season with salt and black pepper to taste.
