Instructions

  1. Pat the chicken thighs dry with paper towels, then coat them evenly with potato starch.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Fry the chicken thighs until golden brown and cooked through, about 6-8 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
  3. In a separate saucepan, combine the jajangmyeon sauce, gochujang, soy sauce, rice vinegar, sugar, and water. Cook over medium heat, stirring constantly, until the sauce thickens and becomes glossy.
  4. Toss the fried chicken thighs in the spicy jajang sauce until evenly coated.
