Spicy Korean Jajangmyeon (짜장면)

Ingredients

  • 1 package of jajangmyeon noodles
  • 1/2 cup of black bean paste
  • 1 tablespoon of vegetable oil
  • 1/2 cup of diced pork or tofu for vegetarian option
  • 1/2 cup of diced onions
  • 1/2 cup of diced zucchini
  • 1/2 cup of diced potatoes
  • 1 1/2 cups of water
  • 1 tablespoon of cornstarch mixed with 2 tablespoons of water
  • Salt and sugar to taste

Instructions

  1. Boil the jajangmyeon noodles according to the package instructions, then drain and set aside.
  2. Heat the vegetable oil in a large wok or skillet over medium heat. Add the diced pork or tofu and cook until browned.
  3. Add the onions, zucchini, and potatoes to the wok and stir-fry for 3-4 minutes.
  4. Add the black bean paste and water to the wok, stirring to combine. Simmer for 10 minutes.
  5. Stir in the cornstarch mixture and cook until the sauce thickens. Season with salt and sugar to taste.
  6. Divide the jajangmyeon noodles among serving bowls and top with the black bean sauce. Serve hot.
