Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup unsalted peanuts
  • 3-4 dried red chilies
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 tablespoons vegetable oil
  • For the sauce:
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1 tablespoon cornstarch
  • 1/4 cup chicken broth

Instructions

  1. Prepare the sauce by combining soy sauce, rice vinegar, sugar, cornstarch, and chicken broth in a bowl. Set aside.
  2. Heat vegetable oil in a wok or large skillet over high heat. Add dried red chilies and stir-fry for a few seconds until fragrant.
  3. Add shrimp to the wok and stir-fry until they turn pink and opaque.
  4. Add garlic, ginger, and half of the green onions to the wok. Stir-fry for another minute.
  5. Pour the prepared sauce into the wok and stir until the sauce thickens and coats the shrimp.
  6. Add peanuts to the wok and stir to combine.
  7. Transfer the Kung Pao shrimp to a serving dish and garnish with the remaining green onions.
