Ingredients
- 1 pound large shrimp, peeled and deveined
- 1/2 cup unsalted peanuts
- 3-4 dried red chilies
- 3 green onions, chopped
- 3 cloves garlic, minced
- 1 teaspoon ginger, minced
- 2 tablespoons vegetable oil
- For the sauce:
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 1 tablespoon cornstarch
- 1/4 cup chicken broth
Instructions
- Prepare the sauce by combining soy sauce, rice vinegar, sugar, cornstarch, and chicken broth in a bowl. Set aside.
- Heat vegetable oil in a wok or large skillet over high heat. Add dried red chilies and stir-fry for a few seconds until fragrant.
- Add shrimp to the wok and stir-fry until they turn pink and opaque.
- Add garlic, ginger, and half of the green onions to the wok. Stir-fry for another minute.
- Pour the prepared sauce into the wok and stir until the sauce thickens and coats the shrimp.
- Add peanuts to the wok and stir to combine.
- Transfer the Kung Pao shrimp to a serving dish and garnish with the remaining green onions.
