Spicy Kwati (तातेको क्वाती)
तातेको क्वाती (Spicy Kwati) is a traditional Newari soup made with a combination of nine different types of sprouted beans. This flavorful and nutritious soup is a popular dish in Newari cuisine, especially during festivals and special occasions.
Ingredients
- 1 cup mixed sprouted beans (black gram, green gram, chickpeas, soybeans, etc.)
- 1 tablespoon ghee
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder
- Salt to taste
- 6 cups water
- Fresh cilantro for garnish
Instructions
- Heat ghee in a large pot over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Stir in ginger-garlic paste, turmeric, cumin powder, coriander powder, red chili powder, and salt. Cook for 2-3 minutes.
- Add the mixed sprouted beans and water. Bring to a boil, then reduce heat and simmer for 1 hour or until the beans are tender.
- Garnish with fresh cilantro before serving.
