तातेको क्वाती (Spicy Kwati) is a traditional Newari soup made with a combination of nine different types of sprouted beans. This flavorful and nutritious soup is a popular dish in Newari cuisine, especially during festivals and special occasions.

Spicy Kwati (तातेको क्वाती)

Ingredients

  • 1 cup mixed sprouted beans (black gram, green gram, chickpeas, soybeans, etc.)
  • 1 tablespoon ghee
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon red chili powder
  • Salt to taste
  • 6 cups water
  • Fresh cilantro for garnish

Instructions

  1. Heat ghee in a large pot over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in ginger-garlic paste, turmeric, cumin powder, coriander powder, red chili powder, and salt. Cook for 2-3 minutes.
  4. Add the mixed sprouted beans and water. Bring to a boil, then reduce heat and simmer for 1 hour or until the beans are tender.
  5. Garnish with fresh cilantro before serving.
