Spicy Lamb Curry (Curry d'Agneau Épicé)

Ingredients

  • 1 kg lamb, cut into cubes
  • 2 onions, finely chopped
  • 3 tomatoes, diced
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 green chilies, chopped
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper
  • 1 cup coconut milk
  • 2 tbsp vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, ginger, and green chilies. Sauté until the onions are soft and translucent.
  2. Add the lamb cubes to the pot and brown them on all sides.
  3. Stir in the curry powder, cumin, coriander, turmeric, and cayenne pepper. Cook for 2 minutes to toast the spices.
  4. Add the diced tomatoes and coconut milk to the pot. Season with salt and stir well.
  5. Cover the pot and simmer the curry for 1 hour, or until the lamb is tender.
  6. Garnish with fresh cilantro before serving.
