Spicy Lamb Curry (Curry d'Agneau Épicé)
Curry d'Agneau Épicé, or Spicy Lamb Curry, is a flavorful and aromatic dish from Burkinabé Cuisine that is sure to tantalize your taste buds with its rich blend of spices and tender lamb.
Ingredients
- 1 kg lamb, cut into cubes
- 2 onions, finely chopped
- 3 tomatoes, diced
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 2 green chilies, chopped
- 2 tbsp curry powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- 1 cup coconut milk
- 2 tbsp vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, ginger, and green chilies. Sauté until the onions are soft and translucent.
- Add the lamb cubes to the pot and brown them on all sides.
- Stir in the curry powder, cumin, coriander, turmeric, and cayenne pepper. Cook for 2 minutes to toast the spices.
- Add the diced tomatoes and coconut milk to the pot. Season with salt and stir well.
- Cover the pot and simmer the curry for 1 hour, or until the lamb is tender.
- Garnish with fresh cilantro before serving.
