Spicy Lamb Curry (mutton Rogan Josh)
Spicy Lamb Curry, also known as Mutton Rogan Josh, is a traditional Pakistani dish that is rich in flavor and spices. This aromatic curry is a staple in Pakistani cuisine and is perfect for a hearty and satisfying meal.
Ingredients
- 1 kg lamb, cut into pieces
- 2 onions, finely chopped
- 4 tomatoes, pureed
- 1/2 cup plain yogurt
- 4 cloves garlic, minced
- 2-inch piece ginger, grated
- 2-3 green chilies, slit lengthwise
- 2 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp Kashmiri red chili powder
- 1/2 tsp garam masala
- 1/4 cup vegetable oil
- Salt to taste
- Fresh cilantro leaves for garnish
Instructions
- Heat oil in a large pot over medium heat. Add cumin seeds and let them sizzle.
- Add chopped onions and sauté until golden brown.
- Add minced garlic, grated ginger, and green chilies. Sauté for 2-3 minutes.
- Add lamb pieces and cook until they are browned on all sides.
- Stir in tomato puree, yogurt, coriander powder, turmeric powder, Kashmiri red chili powder, and salt. Mix well.
- Cover the pot and let the lamb cook in its own juices for 45-50 minutes, or until tender.
- Sprinkle garam masala and garnish with fresh cilantro leaves before serving.
