Spicy Lamb Skewers (羊肉串)

Ingredients

  • 1.5 lbs (700g) lamb, cut into 1-inch cubes
  • 1/4 cup (60ml) soy sauce
  • 2 tbsp (30ml) Chinese cooking wine
  • 2 tbsp (30ml) vegetable oil
  • 2 tsp (10g) sugar
  • 1 tsp (5g) Sichuan peppercorns, crushed
  • 1 tsp (5g) cumin powder
  • 1/2 tsp (3g) chili powder
  • 4 cloves garlic, minced
  • 1 inch (2.5cm) ginger, grated
  • 1/4 cup (15g) chopped scallions
  • Bamboo skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, mix together the soy sauce, Chinese cooking wine, vegetable oil, sugar, Sichuan peppercorns, cumin powder, chili powder, garlic, ginger, and scallions to make the marinade.
  2. Add the lamb cubes to the marinade, making sure each piece is well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat. Thread the marinated lamb cubes onto the soaked bamboo skewers.
  4. Grill the lamb skewers for about 8-10 minutes, turning occasionally, until the meat is cooked to your desired doneness and has a nice charred exterior.
  5. Remove the lamb skewers from the grill and let them rest for a few minutes before serving.
