Ingredients
- 1.5 lbs (700g) lamb, cut into 1-inch cubes
- 1/4 cup (60ml) soy sauce
- 2 tbsp (30ml) Chinese cooking wine
- 2 tbsp (30ml) vegetable oil
- 2 tsp (10g) sugar
- 1 tsp (5g) Sichuan peppercorns, crushed
- 1 tsp (5g) cumin powder
- 1/2 tsp (3g) chili powder
- 4 cloves garlic, minced
- 1 inch (2.5cm) ginger, grated
- 1/4 cup (15g) chopped scallions
- Bamboo skewers, soaked in water for 30 minutes
Instructions
- In a bowl, mix together the soy sauce, Chinese cooking wine, vegetable oil, sugar, Sichuan peppercorns, cumin powder, chili powder, garlic, ginger, and scallions to make the marinade.
- Add the lamb cubes to the marinade, making sure each piece is well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat. Thread the marinated lamb cubes onto the soaked bamboo skewers.
- Grill the lamb skewers for about 8-10 minutes, turning occasionally, until the meat is cooked to your desired doneness and has a nice charred exterior.
- Remove the lamb skewers from the grill and let them rest for a few minutes before serving.
