Ingredients
- 1.5 lbs boneless lamb, cut into cubes
- 2 tablespoons vegetable oil

- 1/2 teaspoon cayenne pepper
- 1/2 cup peanut butter
- 4 cups chicken or vegetable broth

Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the lamb cubes and brown them on all sides. Remove the lamb from the pot and set aside.
- In the same pot, add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
- Stir in the paprika and cayenne pepper, then add the browned lamb back to the pot.
- Add the peanut butter and chicken or vegetable broth. Stir to combine all the ingredients.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, or until the lamb is tender.
- Season with salt and pepper to taste. Serve the spicy lamb stew garnished with chopped fresh cilantro.
