Spicy Lemongrass And Coconut Prawns

Ingredients

  • 500g large prawns, peeled and deveined
  • 2 stalks lemongrass, finely chopped
  • 4 cloves garlic, minced
  • 1 red chili, finely chopped
  • 1 can (400ml) coconut milk
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 lime, juiced
  • Fresh cilantro, for garnish
  • Cooked rice, for serving

Instructions

  1. In a large pan, heat some oil over medium heat. Add the lemongrass, garlic, and red chili. Sauté for 2-3 minutes until fragrant.
  2. Add the prawns to the pan and cook for 2-3 minutes until they start to turn pink.
  3. Pour in the coconut milk, fish sauce, and brown sugar. Simmer for 5-7 minutes until the prawns are cooked through and the sauce has thickened slightly.
  4. Stir in the lime juice and remove from heat.
  5. Serve the prawns and sauce over cooked rice, garnished with fresh cilantro.
