Spicy Lemongrass Beef Skewers (Bò nướng sả)

Ingredients
- 1.5 lbs beef sirloin, thinly sliced
- 3 stalks lemongrass, finely chopped
- 3 cloves garlic, minced
- 2 shallots, finely chopped
- 2 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp vegetable oil
- 1 tsp chili flakes
- 1/2 tsp black pepper
- Bamboo skewers, soaked in water
Instructions
- In a bowl, combine the lemongrass, garlic, shallots, fish sauce, soy sauce, honey, vegetable oil, chili flakes, and black pepper to make the marinade.
- Add the sliced beef to the marinade and mix well. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat the grill to medium-high heat.
- Thread the marinated beef onto the soaked bamboo skewers.
- Grill the beef skewers for 3-4 minutes on each side, or until they are cooked to your desired level of doneness.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
