Spicy Lentil And Rice Pilaf (bhuna Khichuri)
Spicy Lentil and Rice Pilaf, known as Bhuna Khichuri, is a traditional dish from Sylheti Cuisine that is both flavorful and comforting. This dish is perfect for a cozy night in or as a hearty side dish for a larger meal.
Ingredients
- 1 cup basmati rice
- 1 cup red lentils
- 2 onions, thinly sliced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 green chilies, sliced
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric
- 1 teaspoon chili powder
- 2 bay leaves
- 4 cups vegetable broth
- Salt to taste
- 3 tablespoons oil
Instructions
- In a large pot, heat the oil over medium heat. Add the cumin seeds and bay leaves, and cook until fragrant.
- Add the sliced onions and cook until golden brown.
- Stir in the garlic, ginger, and green chilies, and cook for 2 minutes.
- Add the turmeric and chili powder, and cook for another minute.
- Rinse the rice and lentils, then add them to the pot. Stir to coat in the spices.
- Pour in the vegetable broth and season with salt. Bring to a boil, then reduce the heat to low and cover the pot.
- Simmer for 20-25 minutes, or until the rice and lentils are cooked and the liquid is absorbed.
- Fluff the pilaf with a fork and serve hot.
