Spicy Lentil And Rice Pilaf (bhuna Khichuri)

Ingredients

  • 1 cup basmati rice
  • 1 cup red lentils
  • 2 onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 green chilies, sliced
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder
  • 2 bay leaves
  • 4 cups vegetable broth
  • Salt to taste
  • 3 tablespoons oil

Instructions

  1. In a large pot, heat the oil over medium heat. Add the cumin seeds and bay leaves, and cook until fragrant.
  2. Add the sliced onions and cook until golden brown.
  3. Stir in the garlic, ginger, and green chilies, and cook for 2 minutes.
  4. Add the turmeric and chili powder, and cook for another minute.
  5. Rinse the rice and lentils, then add them to the pot. Stir to coat in the spices.
  6. Pour in the vegetable broth and season with salt. Bring to a boil, then reduce the heat to low and cover the pot.
  7. Simmer for 20-25 minutes, or until the rice and lentils are cooked and the liquid is absorbed.
  8. Fluff the pilaf with a fork and serve hot.
