Spicy Lentil And Vegetable Stew (sambhar)
This Spicy Lentil and Vegetable Stew, also known as Sambhar, is a traditional Jain Cuisine dish that is packed with flavor and nutrition. It's a perfect combination of lentils, vegetables, and aromatic spices, making it a wholesome and satisfying meal.
Ingredients
- 1 cup split pigeon peas (toor dal)
- 2 cups mixed vegetables (carrots, beans, pumpkin, drumsticks)
- 1 large tomato, chopped
- 1 small eggplant, diced
- 1 teaspoon tamarind paste
- 1 tablespoon sambar powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 2 dried red chilies
- 10-12 curry leaves
- 2 tablespoons oil
- Salt to taste
Instructions
- Wash the toor dal and pressure cook with 3 cups of water until soft.
- Add the mixed vegetables, tomato, and eggplant to the cooked dal and cook for 10 minutes.
- Dilute the tamarind paste in 1 cup of water and add it to the dal mixture.
- Add sambar powder, turmeric powder, and salt. Simmer for 10 minutes.
- Heat oil in a separate pan and add mustard seeds, cumin seeds, dried red chilies, and curry leaves. Once the seeds splutter, pour this tempering over the dal mixture.
- Simmer for another 5 minutes and serve hot.
