Ingredients

  • 1 cup split pigeon peas (toor dal)
  • 2 cups mixed vegetables (carrots, beans, pumpkin, drumsticks)
  • 1 large tomato, chopped
  • 1 small eggplant, diced
  • 1 teaspoon tamarind paste
  • 1 tablespoon sambar powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 2 dried red chilies
  • 10-12 curry leaves
  • 2 tablespoons oil
  • Salt to taste

Instructions

  1. Wash the toor dal and pressure cook with 3 cups of water until soft.
  2. Add the mixed vegetables, tomato, and eggplant to the cooked dal and cook for 10 minutes.
  3. Dilute the tamarind paste in 1 cup of water and add it to the dal mixture.
  4. Add sambar powder, turmeric powder, and salt. Simmer for 10 minutes.
  5. Heat oil in a separate pan and add mustard seeds, cumin seeds, dried red chilies, and curry leaves. Once the seeds splutter, pour this tempering over the dal mixture.
  6. Simmer for another 5 minutes and serve hot.
