This spicy lentil soup, known as شوربة عدس حارة in Jordanian cuisine, is a comforting and flavorful dish that is perfect for warming up on a cold day.
Ingredients
- 1 cup red lentils
- 4 cups vegetable broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Stir in the cumin, coriander, and cayenne pepper, and cook for another minute.
- Add the red lentils and vegetable broth to the pot.
- Bring the soup to a boil, then reduce the heat and let it simmer for 30-35 minutes, or until the lentils are tender.
- Season with salt and pepper to taste.
