Ingredients

  • 1 cup red lentils
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Stir in the cumin, coriander, and cayenne pepper, and cook for another minute.
  4. Add the red lentils and vegetable broth to the pot.
  5. Bring the soup to a boil, then reduce the heat and let it simmer for 30-35 minutes, or until the lentils are tender.
  6. Season with salt and pepper to taste.
  7. Serve the spicy lentil soup hot, garnished with fresh cilantro.
