Spicy Mango Bbq Chicken
Spicy Mango BBQ Chicken is a delicious and flavorful dish that combines the sweetness of mango with the heat of spicy BBQ sauce. This Bahamian-inspired recipe is perfect for a summer cookout or a casual weeknight dinner.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup mango puree
- 1/2 cup BBQ sauce
- 1 tablespoon hot sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- In a bowl, mix together the mango puree, BBQ sauce, hot sauce, garlic powder, onion powder, salt, and pepper.
- Place the chicken breasts in a resealable plastic bag and pour half of the mango BBQ sauce mixture over the chicken. Seal the bag and marinate in the refrigerator for at least 30 minutes.
- Heat a grill or grill pan over medium-high heat. Grill the chicken for 6-7 minutes on each side, or until fully cooked, basting with the remaining mango BBQ sauce mixture while grilling.
- Once the chicken is cooked through, remove from the grill and let it rest for a few minutes before serving.
