Spicy Mango Chicken Skewers

Ingredients
- 1 lb chicken breast, cut into cubes
- 2 ripe mangoes, peeled and diced
- 1 red onion, cut into chunks
- 1 red bell pepper, cut into chunks
- 1/4 cup soy sauce
- 2 tbsp honey
- 2 tbsp lime juice
- 2 garlic cloves, minced
- 1 tsp chili powder
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- Wooden skewers, soaked in water
Instructions
- In a bowl, combine soy sauce, honey, lime juice, minced garlic, chili powder, cayenne pepper, salt, and pepper. Mix well to make the marinade.
- Place the chicken cubes in the marinade and let it sit for 15 minutes.
- Thread the marinated chicken, mango, red onion, and red bell pepper onto the soaked wooden skewers.
- Heat a grill pan or skillet over medium-high heat. Cook the skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and the mango and vegetables are slightly charred.
- Serve the spicy mango chicken skewers hot with a side of rice or a fresh salad.
