Spicy Mango Chicken Skewers

Ingredients

  • 1 lb chicken breast, cut into cubes
  • 2 ripe mangoes, peeled and diced
  • 1 red onion, cut into chunks
  • 1 red bell pepper, cut into chunks
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 2 tbsp lime juice
  • 2 garlic cloves, minced
  • 1 tsp chili powder
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine soy sauce, honey, lime juice, minced garlic, chili powder, cayenne pepper, salt, and pepper. Mix well to make the marinade.
  2. Place the chicken cubes in the marinade and let it sit for 15 minutes.
  3. Thread the marinated chicken, mango, red onion, and red bell pepper onto the soaked wooden skewers.
  4. Heat a grill pan or skillet over medium-high heat. Cook the skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and the mango and vegetables are slightly charred.
  5. Serve the spicy mango chicken skewers hot with a side of rice or a fresh salad.
