Spicy Mango Chutney (Chutney de Mangue Épicé)
Chutney de Mangue Épicé, or Spicy Mango Chutney, is a popular condiment in British Virgin Islands cuisine. This sweet and tangy chutney with a spicy kick is perfect for pairing with grilled meats, seafood, or as a spread on sandwiches and wraps.
Ingredients
- 4 ripe mangoes, peeled and diced
- 1 cup white vinegar
- 1 cup brown sugar
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 teaspoon mustard seeds
- 1 teaspoon red pepper flakes
- 1 cinnamon stick
- Salt to taste
Instructions
- In a large pot, combine all the ingredients.
- Bring the mixture to a boil over medium heat, then reduce the heat and simmer for 20-25 minutes, stirring occasionally, until the chutney thickens.
- Remove the cinnamon stick and let the chutney cool before transferring it to sterilized jars.
- Seal the jars and store in the refrigerator. The chutney will keep for several weeks.
