Spicy Mango Pickle (avakaya)
Spicy Mango Pickle (Avakaya) is a popular and traditional pickle from Andhra Cuisine, known for its bold flavors and fiery spice level. This pickle is made with raw mangoes, a blend of aromatic spices, and plenty of red chili powder, resulting in a tangy, spicy, and utterly delicious condiment that pairs perfectly with rice, roti, or any Indian meal.
Ingredients
- 4 raw mangoes, cut into small cubes
- 1 cup red chili powder
- 1/4 cup mustard seeds
- 1/4 cup fenugreek seeds
- 1/4 cup salt
- 1/2 cup sesame oil
Instructions
- In a large mixing bowl, combine the raw mango cubes and salt. Mix well and set aside for 2-3 hours.
- After the mangoes release their juices, add the red chili powder and mix thoroughly.
- In a small pan, dry roast the mustard seeds and fenugreek seeds until fragrant. Allow them to cool, then grind into a fine powder.
- Add the ground spice powder to the mango mixture and mix well.
- Heat the sesame oil in a pan and allow it to cool completely. Once cooled, add it to the mango mixture and mix until well combined.
- Transfer the spicy mango pickle to a clean, dry glass jar and let it sit at room temperature for 2-3 days before consuming.
