Spicy Mango Pickle (avakaya)

Ingredients

  • 4 raw mangoes, cut into small cubes
  • 1 cup red chili powder
  • 1/4 cup mustard seeds
  • 1/4 cup fenugreek seeds
  • 1/4 cup salt
  • 1/2 cup sesame oil

Instructions

  1. In a large mixing bowl, combine the raw mango cubes and salt. Mix well and set aside for 2-3 hours.
  2. After the mangoes release their juices, add the red chili powder and mix thoroughly.
  3. In a small pan, dry roast the mustard seeds and fenugreek seeds until fragrant. Allow them to cool, then grind into a fine powder.
  4. Add the ground spice powder to the mango mixture and mix well.
  5. Heat the sesame oil in a pan and allow it to cool completely. Once cooled, add it to the mango mixture and mix until well combined.
  6. Transfer the spicy mango pickle to a clean, dry glass jar and let it sit at room temperature for 2-3 days before consuming.
