Ingredients
- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1 egg
- 2 green onions, finely chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp Sichuan peppercorns, toasted and ground
- 3 tbsp soy sauce
- 2 tbsp Chinese cooking wine (Shaoxing wine)
- 2 tbsp chili oil
- 1/4 cup chicken broth
- 1 tbsp cornstarch
- 2 tbsp vegetable oil
Instructions
- In a large bowl, combine the ground chicken, breadcrumbs, egg, green onions, garlic, ginger, and 1 tablespoon of soy sauce. Mix until well combined.
- Shape the mixture into meatballs, about 1 inch in diameter.
- In a large skillet, heat the vegetable oil over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Remove the meatballs from the skillet and set aside.
- In the same skillet, add the chili oil, Sichuan peppercorns, and remaining soy sauce. Stir in the chicken broth and Chinese cooking wine. Bring the mixture to a simmer.
- In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Stir the slurry into the skillet and cook until the sauce thickens.
- Return the meatballs to the skillet and toss to coat them in the spicy sauce. Cook for an additional 2-3 minutes.
- Serve the spicy mapo chicken meatballs hot, garnished with additional green onions if desired.
