Ingredients
- 1 block (14 oz) soft tofu, cut into cubes
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1-inch piece ginger, minced
- 1/4 lb ground pork (or substitute with mushrooms for a vegetarian version)
- 2 tbsp doubanjiang (spicy broad bean paste)
- 1 tbsp soy sauce
- 1/2 cup chicken or vegetable broth
- 1 tsp sugar
- 1/2 tsp Sichuan peppercorns, toasted and ground
- 2 green onions, thinly sliced
- 1 tsp cornstarch mixed with 2 tsp water (optional, for thickening the sauce)
Instructions
- In a wok or large skillet, heat the vegetable oil over medium heat. Add the garlic and ginger, and stir-fry for 30 seconds.
- Add the ground pork (or mushrooms) and cook until browned.
- Stir in the doubanjiang and soy sauce, then pour in the broth and add the sugar. Stir to combine.
- Gently add the tofu cubes to the wok and simmer for 5-7 minutes, allowing the tofu to absorb the flavors of the sauce.
- If desired, add the cornstarch mixture to thicken the sauce. Stir gently to coat the tofu evenly.
- Sprinkle the ground Sichuan peppercorns and green onions over the tofu before serving.
