Spicy Mapo Tofu (麻婆豆腐)

Ingredients

  • 1 block (14 oz) soft tofu, cut into cubes
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 1/4 lb ground pork (or substitute with mushrooms for a vegetarian version)
  • 2 tbsp doubanjiang (spicy broad bean paste)
  • 1 tbsp soy sauce
  • 1/2 cup chicken or vegetable broth
  • 1 tsp sugar
  • 1/2 tsp Sichuan peppercorns, toasted and ground
  • 2 green onions, thinly sliced
  • 1 tsp cornstarch mixed with 2 tsp water (optional, for thickening the sauce)

Instructions

  1. In a wok or large skillet, heat the vegetable oil over medium heat. Add the garlic and ginger, and stir-fry for 30 seconds.
  2. Add the ground pork (or mushrooms) and cook until browned.
  3. Stir in the doubanjiang and soy sauce, then pour in the broth and add the sugar. Stir to combine.
  4. Gently add the tofu cubes to the wok and simmer for 5-7 minutes, allowing the tofu to absorb the flavors of the sauce.
  5. If desired, add the cornstarch mixture to thicken the sauce. Stir gently to coat the tofu evenly.
  6. Sprinkle the ground Sichuan peppercorns and green onions over the tofu before serving.
