Spicy Masala Dosa

Ingredients

  • 1 cup rice
  • 1/2 cup urad dal (black gram lentils)
  • 3 medium potatoes, boiled and mashed
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon red chili powder
  • 1/4 cup fresh coriander leaves, chopped
  • Salt to taste
  • Oil for cooking

Instructions

  1. Rinse the rice and urad dal separately and soak them in water for 4-6 hours.
  2. Grind the soaked rice and urad dal to a smooth batter. Ferment the batter for 8-10 hours.
  3. For the potato filling, heat oil in a pan and add mustard seeds and cumin seeds. Once they splutter, add chopped onions and green chilies. Sauté until the onions are translucent.
  4. Add turmeric powder, red chili powder, and mashed potatoes. Mix well and cook for 2-3 minutes. Add salt and chopped coriander leaves. Remove from heat and set aside.
  5. Heat a non-stick pan and pour a ladleful of the dosa batter. Spread it in a circular motion to make a thin crepe. Drizzle oil around the edges and cook until the bottom is golden and crispy.
  6. Place a portion of the potato filling in the center of the dosa. Fold the dosa over the filling and serve hot.
