Spicy Mutton with Banana Blossoms, known as Kosa Mangsho in Sylheti Cuisine, is a flavorful and aromatic dish that combines tender mutton with the unique taste of banana blossoms. This dish is a perfect representation of the rich and diverse flavors of Sylheti cuisine.
Ingredients
- 500g mutton, cut into pieces
- 1 cup banana blossoms, thinly sliced
- 2 onions, finely chopped
- 2 tomatoes, pureed
- 1 tablespoon ginger-garlic paste
- 2 green chilies, slit
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- 3 tablespoons mustard oil
- Fresh coriander leaves for garnish
Instructions
- Heat mustard oil in a pan and add the chopped onions. Sauté until golden brown.
- Add the ginger-garlic paste and green chilies. Sauté for a few minutes.
- Add the mutton pieces and cook until they are browned.
- Stir in the tomato puree, turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Cook for 5-7 minutes.
- Add the sliced banana blossoms and mix well. Cook for another 5 minutes.
- Pour in enough water to cover the mutton and banana blossoms. Cover and cook on low heat until the mutton is tender.
- Sprinkle garam masala and garnish with fresh coriander leaves before serving.
