Spicy Pancake, also known as Masala Dosa, is a popular South Indian delicacy from Karnataka Cuisine. It is a thin, crispy pancake filled with a spicy potato filling, served with coconut chutney and sambar.

Spicy Pancake (masala Dosa)

Ingredients

  • 2 cups rice flour
  • 1/2 cup urad dal (black gram lentils)
  • 1/2 teaspoon fenugreek seeds
  • 3-4 medium potatoes, boiled and mashed
  • 1 onion, finely chopped
  • 2-3 green chilies, finely chopped
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon asafoetida (hing)
  • Curry leaves
  • Turmeric powder
  • Salt to taste
  • Oil for cooking

Instructions

  1. In a bowl, mix rice flour, urad dal, and fenugreek seeds. Add water and let it ferment overnight.
  2. For the potato filling, heat oil in a pan, add mustard seeds, cumin seeds, asafoetida, curry leaves, and green chilies. Sauté for a minute.
  3. Add chopped onions and sauté until translucent. Then add turmeric powder and mashed potatoes. Mix well and cook for 2-3 minutes. Add salt to taste.
  4. Heat a non-stick pan, pour a ladleful of the dosa batter and spread it in a circular motion to make a thin pancake. Drizzle oil on the edges and cook until crispy.
  5. Place a portion of the potato filling in the center of the dosa, fold it, and serve hot with coconut chutney and sambar.
