Spicy Pancake (masala Dosa)
Spicy Pancake, also known as Masala Dosa, is a popular South Indian delicacy from Karnataka Cuisine. It is a thin, crispy pancake filled with a spicy potato filling, served with coconut chutney and sambar.
Ingredients
- 2 cups rice flour
- 1/2 cup urad dal (black gram lentils)
- 1/2 teaspoon fenugreek seeds
- 3-4 medium potatoes, boiled and mashed
- 1 onion, finely chopped
- 2-3 green chilies, finely chopped
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon asafoetida (hing)
- Curry leaves
- Turmeric powder
- Salt to taste
- Oil for cooking
Instructions
- In a bowl, mix rice flour, urad dal, and fenugreek seeds. Add water and let it ferment overnight.
- For the potato filling, heat oil in a pan, add mustard seeds, cumin seeds, asafoetida, curry leaves, and green chilies. Sauté for a minute.
- Add chopped onions and sauté until translucent. Then add turmeric powder and mashed potatoes. Mix well and cook for 2-3 minutes. Add salt to taste.
- Heat a non-stick pan, pour a ladleful of the dosa batter and spread it in a circular motion to make a thin pancake. Drizzle oil on the edges and cook until crispy.
- Place a portion of the potato filling in the center of the dosa, fold it, and serve hot with coconut chutney and sambar.
