Spicy Peanut Chicken Stew (Mafé)
Mafé is a popular Togolese dish that features tender chicken simmered in a rich and spicy peanut sauce. This hearty stew is packed with flavor and is perfect for a cozy night in.
Ingredients
- 1.5 lbs chicken thighs, cut into pieces
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup peanut butter
- 2 cups chicken broth
- 1 can diced tomatoes
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chicken pieces and brown on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the chopped onion and cook until softened. Add the minced garlic and cook for an additional minute.
- Stir in the peanut butter, chicken broth, diced tomatoes, paprika, cayenne pepper, salt, and pepper. Return the chicken to the pot and bring the mixture to a simmer.
- Cover and cook for 45-50 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened.
- Serve the Mafé hot over rice or with crusty bread.
