Spicy Peanut Chicken Stew (Mafé)

Ingredients

  • 1.5 lbs chicken thighs, cut into pieces
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup peanut butter
  • 2 cups chicken broth
  • 1 can diced tomatoes
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chicken pieces and brown on all sides. Remove the chicken from the pot and set aside.
  2. In the same pot, add the chopped onion and cook until softened. Add the minced garlic and cook for an additional minute.
  3. Stir in the peanut butter, chicken broth, diced tomatoes, paprika, cayenne pepper, salt, and pepper. Return the chicken to the pot and bring the mixture to a simmer.
  4. Cover and cook for 45-50 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened.
  5. Serve the Mafé hot over rice or with crusty bread.
