Ingredients
- 1 cup roasted peanuts
- 2 garlic cloves
- 1 small onion, chopped
- 1 tablespoon aji amarillo paste
- 1/4 cup vegetable oil
- 1/4 cup evaporated milk
- 4 saltine crackers
- 1/4 cup fresh cheese, crumbled
- Salt and pepper to taste
Instructions
- In a blender, combine the roasted peanuts, garlic, onion, aji amarillo paste, and vegetable oil. Blend until smooth.
- Add the evaporated milk and saltine crackers. Blend again until the mixture is creamy.
- Transfer the mixture to a bowl and fold in the crumbled fresh cheese. Season with salt and pepper to taste.
- Serve the spicy peanut sauce with your favorite dishes or store in the refrigerator for up to 3 days.
