Spicy Peanut Sauce (sambal Kacang)

Ingredients

  • 1 cup roasted peanuts
  • 3-4 red chilies, seeded and chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tamarind paste
  • 1 tablespoon palm sugar
  • 1 teaspoon salt
  • 1 cup water

Instructions

  1. In a food processor, blend the roasted peanuts until finely ground.
  2. Add the red chilies, garlic, tamarind paste, palm sugar, and salt to the food processor. Blend until smooth.
  3. Transfer the mixture to a saucepan and add water. Cook over medium heat, stirring constantly, for 5 minutes or until the sauce thickens.
  4. Remove from heat and let it cool before serving.
