Ingredients

  • 2 cups shredded cabbage
  • 1 cup shredded carrots
  • 1/2 cup thinly sliced scotch bonnet peppers
  • 1/2 cup thinly sliced shallots
  • 1/4 cup chopped bell peppers
  • 1/4 cup chopped parsley
  • 1/4 cup lime juice
  • 1/4 cup white vinegar
  • 1 tablespoon salt
  • 1 tablespoon sugar

Instructions

  1. In a large bowl, combine the shredded cabbage, carrots, scotch bonnet peppers, shallots, bell peppers, and parsley.
  2. In a small saucepan, heat the lime juice, white vinegar, salt, and sugar over medium heat until the sugar and salt are dissolved. Remove from heat and let it cool for a few minutes.
  3. Pour the vinegar mixture over the vegetables and toss to combine.
  4. Transfer the pickled vegetables to a clean jar and refrigerate for at least 2 hours before serving.
