Ingredients
- 2 cups shredded cabbage
- 1 cup shredded carrots
- 1/2 cup thinly sliced scotch bonnet peppers
- 1/2 cup thinly sliced shallots
- 1/4 cup chopped bell peppers
- 1/4 cup chopped parsley
- 1/4 cup lime juice
- 1/4 cup white vinegar
- 1 tablespoon salt
- 1 tablespoon sugar
Instructions
- In a large bowl, combine the shredded cabbage, carrots, scotch bonnet peppers, shallots, bell peppers, and parsley.
- In a small saucepan, heat the lime juice, white vinegar, salt, and sugar over medium heat until the sugar and salt are dissolved. Remove from heat and let it cool for a few minutes.
- Pour the vinegar mixture over the vegetables and toss to combine.
- Transfer the pickled vegetables to a clean jar and refrigerate for at least 2 hours before serving.
