Spicy Pineapple Teriyaki Salmon
This Spicy Pineapple Teriyaki Salmon recipe is a delightful fusion of Caribbean and Asian flavors, inspired by the vibrant cuisine of the US Virgin Islands.
Ingredients
- 4 salmon fillets
- 1 cup pineapple chunks
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- 1 teaspoon grated ginger
- 1 teaspoon red pepper flakes
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- In a bowl, mix together the pineapple chunks, soy sauce, brown sugar, rice vinegar, ginger, red pepper flakes, and garlic to make the teriyaki marinade.
- Season the salmon fillets with salt and pepper, then place them in a resealable plastic bag or shallow dish. Pour the teriyaki marinade over the salmon, making sure to coat each fillet. Marinate in the refrigerator for at least 30 minutes.
- Heat a non-stick skillet over medium-high heat. Remove the salmon from the marinade and place them in the skillet. Cook for 4-5 minutes on each side, or until the salmon is cooked to your desired doneness.
- While the salmon is cooking, pour the remaining marinade into a small saucepan. Bring to a boil, then reduce heat and simmer for 5-7 minutes until the sauce thickens.
- Serve the cooked salmon with the thickened teriyaki sauce drizzled on top. Enjoy your Spicy Pineapple Teriyaki Salmon!
