Ingredients
- 1 cup rice
- 4 cups water

- 4 hard-boiled eggs, halved
Instructions
- In a pot, combine the rice, water, lemongrass, red chilies, ginger, and salt.
- Cook over medium heat, stirring occasionally, for 45 minutes or until the rice is soft and the porridge has thickened.
- Heat the vegetable oil in a pan and fry the hard-boiled eggs until golden brown. Set aside.
- To serve, ladle the porridge into bowls and top with the fried eggs.
