Spicy Prawn And Eggplant Stir-fry

Ingredients

  • 500g prawns, peeled and deveined
  • 2 eggplants, diced
  • 3 cloves garlic, minced
  • 1 red chili, thinly sliced
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1/2 cup chicken broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat.
  2. Add the prawns and stir-fry for 2-3 minutes until they turn pink. Remove from the wok and set aside.
  3. Heat the remaining oil in the wok and add the garlic, chili, and onion. Stir-fry for 1-2 minutes until fragrant.
  4. Add the eggplant and bell pepper to the wok and stir-fry for 3-4 minutes until they begin to soften.
  5. Return the prawns to the wok and add the soy sauce, oyster sauce, sugar, and chicken broth. Stir-fry for another 2-3 minutes until everything is well combined and heated through.
  6. Season with salt and pepper to taste.
  7. Serve the spicy prawn and eggplant stir-fry hot with steamed rice.
