Spicy Prawn And Eggplant Stir-fry
This Spicy Prawn and Eggplant Stir-Fry is a delicious and flavorful dish from Christmas Island cuisine. The combination of prawns and eggplant, stir-fried with aromatic spices, creates a mouthwatering meal that is perfect for any occasion.
Ingredients
- 500g prawns, peeled and deveined
- 2 eggplants, diced
- 3 cloves garlic, minced
- 1 red chili, thinly sliced
- 1 onion, sliced
- 1 red bell pepper, sliced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sugar
- 1/2 cup chicken broth
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat.
- Add the prawns and stir-fry for 2-3 minutes until they turn pink. Remove from the wok and set aside.
- Heat the remaining oil in the wok and add the garlic, chili, and onion. Stir-fry for 1-2 minutes until fragrant.
- Add the eggplant and bell pepper to the wok and stir-fry for 3-4 minutes until they begin to soften.
- Return the prawns to the wok and add the soy sauce, oyster sauce, sugar, and chicken broth. Stir-fry for another 2-3 minutes until everything is well combined and heated through.
- Season with salt and pepper to taste.
- Serve the spicy prawn and eggplant stir-fry hot with steamed rice.
