Spicy Prawn Pilaf (Pilaf de Crevettes Épicées)

Ingredients

  • 1 cup basmati rice
  • 200g prawns, peeled and deveined
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red chili, finely chopped
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 2 cups chicken or vegetable broth
  • 2 tbsp olive oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic, chopped red chili, cumin powder, coriander powder, and turmeric powder. Cook for 2 minutes, stirring constantly.
  3. Add the basmati rice to the pan and stir to coat the rice with the spices and aromatics.
  4. Pour in the chicken or vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.
  5. After 15 minutes, add the prawns to the pan, cover, and cook for an additional 5-7 minutes until the prawns are cooked through and the rice is tender.
  6. Once done, fluff the pilaf with a fork and garnish with fresh cilantro.
