Spicy Prawn Pilaf (Pilaf de Crevettes Épicées)

Ingredients
- 1 cup basmati rice
- 200g prawns, peeled and deveined
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red chili, finely chopped
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 2 cups chicken or vegetable broth
- 2 tbsp olive oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- In a large pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic, chopped red chili, cumin powder, coriander powder, and turmeric powder. Cook for 2 minutes, stirring constantly.
- Add the basmati rice to the pan and stir to coat the rice with the spices and aromatics.
- Pour in the chicken or vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.
- After 15 minutes, add the prawns to the pan, cover, and cook for an additional 5-7 minutes until the prawns are cooked through and the rice is tender.
- Once done, fluff the pilaf with a fork and garnish with fresh cilantro.
