Spicy Rendang Beef Curry
Spicy Rendang Beef Curry is a traditional Malay dish known for its rich and flavorful sauce. This slow-cooked curry is packed with aromatic spices and tender beef, making it a perfect comfort food for any occasion.
Ingredients
- 2 lbs beef, cut into cubes
- 4 shallots, finely chopped
- 5 cloves garlic, minced
- 1 inch ginger, grated
- 3 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 1 cup coconut milk
- 1 cup water
- 3 tbsp vegetable oil
- 1 tbsp tamarind paste
- Salt to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the shallots, garlic, and ginger. Sauté until fragrant.
- Add the beef cubes and cook until browned.
- Pour in the coconut milk and water. Add the lemongrass, kaffir lime leaves, and tamarind paste.
- Season with salt and bring to a boil. Reduce the heat to low and simmer for 2-3 hours, stirring occasionally, until the beef is tender and the sauce is thick.
- Remove the lemongrass stalks and kaffir lime leaves before serving.
