Spicy Rendang Beef Curry

Ingredients

  • 2 lbs beef, cut into cubes
  • 4 shallots, finely chopped
  • 5 cloves garlic, minced
  • 1 inch ginger, grated
  • 3 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 1 cup coconut milk
  • 1 cup water
  • 3 tbsp vegetable oil
  • 1 tbsp tamarind paste
  • Salt to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the shallots, garlic, and ginger. Sauté until fragrant.
  3. Add the beef cubes and cook until browned.
  4. Pour in the coconut milk and water. Add the lemongrass, kaffir lime leaves, and tamarind paste.
  5. Season with salt and bring to a boil. Reduce the heat to low and simmer for 2-3 hours, stirring occasionally, until the beef is tender and the sauce is thick.
  6. Remove the lemongrass stalks and kaffir lime leaves before serving.
