Spicy Rendang Explosion
Spicy Rendang Explosion is a classic Malay dish known for its rich and spicy flavors. This slow-cooked beef dish is packed with aromatic spices and coconut milk, creating a tender and flavorful explosion in every bite.
Ingredients
- 1 kg beef, cut into chunks
- 4 cups coconut milk
- 5 shallots, finely chopped
- 4 cloves garlic, minced
- 2 lemongrass stalks, bruised
- 5 kaffir lime leaves
- 1 inch galangal, sliced
- 1 inch ginger, sliced
- 3 red chilies, sliced
- 1 tbsp tamarind paste
- 2 tbsp palm sugar
- Salt to taste
Instructions
- In a large pot, combine coconut milk, shallots, garlic, lemongrass, kaffir lime leaves, galangal, ginger, and red chilies. Bring to a simmer over medium heat.
- Add the beef chunks to the pot and stir to combine. Cover and simmer over low heat for 2 hours, stirring occasionally.
- Add tamarind paste, palm sugar, and salt to the pot. Continue to simmer, uncovered, for an additional 1 hour or until the beef is tender and the sauce has thickened.
- Serve the Spicy Rendang Explosion hot with steamed rice or crusty bread.
