Spicy Rendang Explosion

Ingredients

  • 1 kg beef, cut into chunks
  • 4 cups coconut milk
  • 5 shallots, finely chopped
  • 4 cloves garlic, minced
  • 2 lemongrass stalks, bruised
  • 5 kaffir lime leaves
  • 1 inch galangal, sliced
  • 1 inch ginger, sliced
  • 3 red chilies, sliced
  • 1 tbsp tamarind paste
  • 2 tbsp palm sugar
  • Salt to taste

Instructions

  1. In a large pot, combine coconut milk, shallots, garlic, lemongrass, kaffir lime leaves, galangal, ginger, and red chilies. Bring to a simmer over medium heat.
  2. Add the beef chunks to the pot and stir to combine. Cover and simmer over low heat for 2 hours, stirring occasionally.
  3. Add tamarind paste, palm sugar, and salt to the pot. Continue to simmer, uncovered, for an additional 1 hour or until the beef is tender and the sauce has thickened.
  4. Serve the Spicy Rendang Explosion hot with steamed rice or crusty bread.
