Spicy Rice (karachi Biryani)
Spicy Rice, also known as Karachi Biryani, is a popular Pakistani dish known for its aromatic flavors and spicy kick. This flavorful rice dish is a staple in Pakistani cuisine and is perfect for special occasions or family gatherings.
Ingredients
- 2 cups basmati rice
- 500g chicken, cut into pieces
- 1 large onion, thinly sliced
- 1/2 cup plain yogurt
- 4 tomatoes, chopped
- 4 green chilies, chopped
- 1/4 cup fresh coriander leaves, chopped
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup cooking oil
- 1/4 cup ghee (clarified butter)
- 1 tablespoon ginger garlic paste
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 2 black cardamom pods
- 4 green cardamom pods
- 4 cloves
- 2 cinnamon sticks
- Salt to taste
- 4 cups water
Instructions
- Wash the basmati rice and soak in water for 30 minutes. Drain and set aside.
- In a large pot, heat the cooking oil and ghee. Add the sliced onions and fry until golden brown. Remove half of the fried onions and set aside for garnish.
- Add the chicken pieces to the pot and cook until they are no longer pink. Add ginger garlic paste, red chili powder, turmeric powder, cumin seeds, black cardamom pods, green cardamom pods, cloves, and cinnamon sticks. Stir well.
- Next, add the chopped tomatoes, green chilies, plain yogurt, and salt. Cook for 5 minutes until the tomatoes are soft and the oil separates.
- Stir in the soaked basmati rice and add 4 cups of water. Bring to a boil, then reduce the heat to low, cover the pot, and let the rice cook for 15-20 minutes until tender.
- Once the rice is cooked, sprinkle garam masala, fresh coriander leaves, and fresh mint leaves on top. Cover and let it steam for another 5 minutes.
- Garnish with the reserved fried onions and serve hot.
