Spicy Rice Pilaf (sindhi Biryani Pulao)

Ingredients

  • 2 cups basmati rice
  • 500g chicken, cut into pieces
  • 1 large onion, thinly sliced
  • 1/2 cup yogurt
  • 4 tomatoes, chopped
  • 4 green chilies, chopped
  • 1/4 cup fresh coriander, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup cooking oil
  • 1/4 cup ghee (clarified butter)
  • 1 tablespoon ginger garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon saffron strands (optional)
  • Salt to taste

Instructions

  1. Wash the basmati rice and soak in water for 30 minutes. Drain and set aside.
  2. In a large pot, heat the cooking oil and ghee. Add the cumin seeds and sliced onion. Saute until the onion is golden brown.
  3. Add the chicken pieces and ginger garlic paste. Cook until the chicken is no longer pink.
  4. Stir in the chopped tomatoes, green chilies, red chili powder, turmeric powder, and salt. Cook until the tomatoes are soft and the oil separates.
  5. Whisk the yogurt and garam masala. Add to the pot and cook for 5 minutes.
  6. Layer the soaked rice over the chicken mixture. Sprinkle saffron strands on top, if using.
  7. Add 4 cups of water, cover the pot, and cook on low heat until the rice is tender and the water is absorbed.
  8. Garnish with fresh coriander and mint leaves. Serve hot.
