Spicy Rice Pilaf (sindhi Biryani Pulao)
Spicy Rice Pilaf, also known as Sindhi Biryani Pulao, is a flavorful and aromatic dish from Pakistani cuisine. It is a perfect combination of rice, spices, and meat, creating a delicious and satisfying meal.
Ingredients
- 2 cups basmati rice
- 500g chicken, cut into pieces
- 1 large onion, thinly sliced
- 1/2 cup yogurt
- 4 tomatoes, chopped
- 4 green chilies, chopped
- 1/4 cup fresh coriander, chopped
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup cooking oil
- 1/4 cup ghee (clarified butter)
- 1 tablespoon ginger garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala
- 1/4 teaspoon saffron strands (optional)
- Salt to taste
Instructions
- Wash the basmati rice and soak in water for 30 minutes. Drain and set aside.
- In a large pot, heat the cooking oil and ghee. Add the cumin seeds and sliced onion. Saute until the onion is golden brown.
- Add the chicken pieces and ginger garlic paste. Cook until the chicken is no longer pink.
- Stir in the chopped tomatoes, green chilies, red chili powder, turmeric powder, and salt. Cook until the tomatoes are soft and the oil separates.
- Whisk the yogurt and garam masala. Add to the pot and cook for 5 minutes.
- Layer the soaked rice over the chicken mixture. Sprinkle saffron strands on top, if using.
- Add 4 cups of water, cover the pot, and cook on low heat until the rice is tender and the water is absorbed.
- Garnish with fresh coriander and mint leaves. Serve hot.
