Spicy Rice (sindhi Biryani)
Spicy Rice, also known as Sindhi Biryani, is a flavorful and aromatic rice dish that originates from the Sindh province of Pakistan. This dish is packed with a unique blend of spices and tender meat, making it a popular choice for special occasions and gatherings.
Ingredients
- 2 cups basmati rice, soaked for 30 minutes and drained
- 500g chicken, cut into pieces
- 1/2 cup cooking oil
- 2 large onions, thinly sliced
- 1 tbsp ginger garlic paste
- 1 cup yogurt
- 1/4 cup milk
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- 1/2 tsp cumin seeds
- 1/4 tsp saffron strands, soaked in 2 tbsp warm milk
- Salt to taste
- Fresh coriander and mint leaves for garnish
Instructions
- Heat oil in a large pot and fry the onions until golden brown. Remove half of the fried onions and set aside for later use.
- Add ginger garlic paste to the remaining onions in the pot and sauté for 2 minutes.
- Add chicken pieces and cook until they are no longer pink. Then, add yogurt, turmeric powder, red chili powder, garam masala, and salt. Cook for 5 minutes.
- In a separate pot, bring water to a boil and add the soaked and drained rice. Cook the rice until it is 70% done, then drain and set aside.
- Layer the partially cooked rice over the chicken in the pot. Sprinkle cumin seeds and pour the saffron milk over the rice. Top with the reserved fried onions, mint, and coriander leaves.
- Cover the pot with a tight-fitting lid and cook on low heat for 15-20 minutes, allowing the flavors to meld together.
- Gently mix the rice and chicken before serving, ensuring the layers are well combined.
