Ingredients
- 1 lb chicken breast, diced
- 2 tbsp vegetable oil
- 1 onion, finely chopped

- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 8 small corn tortillas

Instructions
- Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Heat the remaining 1 tablespoon of oil in the same skillet. Add the chopped onion, garlic, red bell pepper, and jalapeño pepper. Cook until the vegetables are softened, about 5 minutes.
- Return the cooked chicken to the skillet. Add the cumin, paprika, cayenne pepper, salt, and pepper. Stir to combine and cook for an additional 2-3 minutes to allow the flavors to meld.
- Warm the corn tortillas in a dry skillet or directly over a gas flame until they are soft and pliable.
- Assemble the tacos by placing a spoonful of the spicy chicken mixture onto each tortilla. Top with shredded cabbage, chopped cilantro, and a squeeze of fresh lime juice.
