Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 pound beef, cubed
  • 2 tomatoes, chopped
  • 2 potatoes, peeled and diced
  • 2 carrots, sliced
  • 2 cups beef broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the onion, garlic, and bell pepper, and cook until softened.
  3. Add the beef to the pot and brown on all sides.
  4. Stir in the tomatoes, potatoes, and carrots.
  5. Pour in the beef broth and season with cumin, paprika, chili powder, salt, and pepper.
  6. Bring the stew to a boil, then reduce the heat and simmer for 1 hour, or until the beef is tender.
  7. Adjust seasoning to taste and serve hot.
