Spicy Sanya Khuna (तातेको सन्या खुना)

Ingredients

  • 500g boneless chicken, cut into small pieces
  • 2 onions, finely chopped
  • 4 tomatoes, pureed
  • 3 tbsp mustard oil
  • 1 tbsp ginger-garlic paste
  • 2 tbsp Sichuan pepper powder
  • 1 tbsp cumin powder
  • 1 tbsp coriander powder
  • 1 tsp turmeric powder
  • 2-3 dry red chilies
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat mustard oil in a pan and add dry red chilies.
  2. Add chopped onions and sauté until golden brown.
  3. Add ginger-garlic paste and sauté for a few minutes.
  4. Add chicken pieces and cook until they turn golden brown.
  5. Add tomato puree, Sichuan pepper powder, cumin powder, coriander powder, turmeric powder, and salt. Mix well.
  6. Cover and cook on low heat for 30-40 minutes until the chicken is tender.
  7. Garnish with fresh coriander leaves and serve hot.
