Spicy Sardine Curry (mathi Mulakittathu)

Ingredients

  • 500g sardines, cleaned and gutted
  • 2 onions, thinly sliced
  • 3 tomatoes, chopped
  • 4 green chilies, slit
  • 1 inch ginger, julienned
  • 4 cloves garlic, minced
  • 1 sprig curry leaves
  • 1 tsp turmeric powder
  • 2 tbsp red chili powder
  • 1 tbsp coriander powder
  • 1/2 tsp fenugreek seeds
  • 1/2 cup coconut milk
  • Salt to taste
  • 2 tbsp coconut oil

Instructions

  1. Heat coconut oil in a pan and add fenugreek seeds. Once they splutter, add onions, green chilies, ginger, garlic, and curry leaves. Sauté until onions turn golden brown.
  2. Add turmeric powder, red chili powder, and coriander powder. Sauté for a minute.
  3. Add tomatoes and cook until they turn mushy.
  4. Add coconut milk and bring the curry to a gentle simmer.
  5. Gently add the cleaned sardines to the curry and cook for 10-15 minutes until the fish is cooked through.
  6. Adjust salt and spice levels according to taste.
