Spicy Sausage and Lentil Stew (Kolbász és lencse)
Kolbász és lencse, or Spicy Sausage and Lentil Stew, is a hearty and flavorful dish that originates from Palatine cuisine. This stew is perfect for a cozy night in and is packed with protein and warming spices.
Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 8 oz kolbász (Hungarian sausage), sliced
- 1 cup dried lentils, rinsed
- 4 cups chicken or vegetable broth
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and minced garlic, and sauté until softened.
- Add the sliced kolbász to the pot and cook until browned.
- Stir in the dried lentils, chicken or vegetable broth, paprika, cayenne pepper, salt, and pepper.
- Bring the stew to a boil, then reduce the heat and let it simmer for 45-50 minutes, or until the lentils are tender.
- Adjust seasoning to taste and serve hot.
