Spicy Sausage and Lentil Stew (Kolbász és lencse)

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 8 oz kolbász (Hungarian sausage), sliced
  • 1 cup dried lentils, rinsed
  • 4 cups chicken or vegetable broth
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic, and sauté until softened.
  3. Add the sliced kolbász to the pot and cook until browned.
  4. Stir in the dried lentils, chicken or vegetable broth, paprika, cayenne pepper, salt, and pepper.
  5. Bring the stew to a boil, then reduce the heat and let it simmer for 45-50 minutes, or until the lentils are tender.
  6. Adjust seasoning to taste and serve hot.
