Spicy Sausage Stew (Gulyásleves)

Ingredients

  • 1 lb spicy sausage, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 large potatoes, diced
  • 1 red bell pepper, chopped
  • 2 tbsp paprika
  • 1 tsp caraway seeds
  • 4 cups beef broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the sliced sausage over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until fragrant.
  3. Stir in the diced potatoes, chopped red bell pepper, paprika, and caraway seeds.
  4. Pour in the beef broth and bring the stew to a simmer.
  5. Cover and cook for 1.5 to 2 hours, or until the potatoes are tender.
  6. Season with salt and pepper to taste before serving.
