Spicy Sausage Stew (Gulyásleves)
Gulyásleves, also known as Hungarian Goulash, is a traditional spicy sausage stew that originates from Palatine cuisine. This hearty and flavorful dish is perfect for warming up on a cold day.
Ingredients
- 1 lb spicy sausage, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 large potatoes, diced
- 1 red bell pepper, chopped
- 2 tbsp paprika
- 1 tsp caraway seeds
- 4 cups beef broth
- Salt and pepper to taste
Instructions
- In a large pot, brown the sliced sausage over medium heat.
- Add the chopped onion and minced garlic, and sauté until fragrant.
- Stir in the diced potatoes, chopped red bell pepper, paprika, and caraway seeds.
- Pour in the beef broth and bring the stew to a simmer.
- Cover and cook for 1.5 to 2 hours, or until the potatoes are tender.
- Season with salt and pepper to taste before serving.
