Spicy Sesame Chicken (麻辣鸡丁)

Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into small cubes
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 tablespoons cornstarch
  • 3 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2-3 tablespoons Hunan chili paste
  • 1 tablespoon sugar
  • 1/4 cup chicken broth
  • 2 green onions, thinly sliced
  • 2 tablespoons toasted sesame seeds

Instructions

  1. In a bowl, combine the chicken cubes with soy sauce, rice vinegar, sesame oil, and cornstarch. Toss to coat the chicken evenly.
  2. Heat vegetable oil in a wok or large skillet over high heat. Add the chicken and stir-fry until golden and cooked through. Remove the chicken from the wok and set aside.
  3. In the same wok, add a bit more oil if needed and sauté the garlic and ginger until fragrant.
  4. Add the Hunan chili paste and sugar, stir-fry for a minute.
  5. Pour in the chicken broth and bring to a simmer. Return the cooked chicken to the wok and toss to coat in the spicy sauce.
  6. Transfer the spicy sesame chicken to a serving plate and garnish with sliced green onions and toasted sesame seeds.
