Ingredients
- 8 oz Shanghai noodles
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1/4 cup soy sauce
- 2 tbsp chili oil
- 1 tbsp rice vinegar
- 1 tbsp sugar
- 1/2 cup shredded carrots
- 1/2 cup sliced green onions
- Protein of your choice (tofu, chicken, or shrimp)
Instructions
- Boil the Shanghai noodles according to package instructions. Drain and set aside.
- In a large pan, heat vegetable oil over medium heat. Add minced garlic and grated ginger, and sauté until fragrant.
- Stir in soy sauce, chili oil, rice vinegar, and sugar. Cook for 2 minutes.
- Add the cooked noodles to the pan and toss to coat with the sauce.
- Top the noodles with shredded carrots, sliced green onions, and your choice of protein.
- Serve hot and enjoy!
