Spicy Shanghai Noodles (辣上海面)

Ingredients

  • 8 oz Shanghai noodles
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1/4 cup soy sauce
  • 2 tbsp chili oil
  • 1 tbsp rice vinegar
  • 1 tbsp sugar
  • 1/2 cup shredded carrots
  • 1/2 cup sliced green onions

Instructions

  1. Boil the Shanghai noodles according to package instructions. Drain and set aside.
  2. In a large pan, heat vegetable oil over medium heat. Add minced garlic and grated ginger, and sauté until fragrant.
  3. Stir in soy sauce, chili oil, rice vinegar, and sugar. Cook for 2 minutes.
