Spicy Shanghai Shrimp Stir-Fry (辣上海炒虾)

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 green onions, sliced
  • 1 red bell pepper, sliced
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon chili flakes

Instructions

  1. Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat.
  2. Add the shrimp and stir-fry for 2-3 minutes until pink and opaque. Remove the shrimp from the wok and set aside.
  3. Heat the remaining 1 tablespoon of oil in the wok. Add the garlic, ginger, and white parts of the green onions. Stir-fry for 1 minute.
  4. Add the red bell pepper and continue stir-frying for another 2 minutes.
  5. In a small bowl, whisk together the soy sauce, rice vinegar, sugar, cornstarch, and chili flakes. Pour the sauce into the wok and bring to a simmer.
  6. Return the cooked shrimp to the wok and toss to coat in the sauce. Cook for an additional 1-2 minutes until the sauce thickens.
  7. Garnish with the remaining green onion slices and serve hot.
