Spicy Shrimp Stew (Caldeirada de Camarão)
Caldeirada de Camarão is a traditional Cape Verdean spicy shrimp stew that is bursting with flavor. This dish is perfect for seafood lovers and those who enjoy a little kick in their meals.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 tomatoes, chopped
- 1 cup fish or vegetable stock
- 1/2 cup white wine
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic, and sauté until fragrant.
- Add the bell peppers and tomatoes, and cook until the vegetables are softened.
- Pour in the stock and white wine, then add the paprika, cayenne pepper, salt, and pepper.
- Simmer for 15 minutes to allow the flavors to meld.
- Add the shrimp and cook for an additional 5-7 minutes until they are pink and cooked through.
- Adjust the seasoning if needed, then serve the stew hot, garnished with fresh cilantro.
