Spicy Shrimp Stew (Caldeirada de Camarão)

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 tomatoes, chopped
  • 1 cup fish or vegetable stock
  • 1/2 cup white wine
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, and sauté until fragrant.
  3. Add the bell peppers and tomatoes, and cook until the vegetables are softened.
  4. Pour in the stock and white wine, then add the paprika, cayenne pepper, salt, and pepper.
  5. Simmer for 15 minutes to allow the flavors to meld.
  6. Add the shrimp and cook for an additional 5-7 minutes until they are pink and cooked through.
  7. Adjust the seasoning if needed, then serve the stew hot, garnished with fresh cilantro.
