Ingredients

  • 1 lb beef, thinly sliced
  • 8 cups beef broth
  • 4 cloves garlic, minced
  • 2-inch piece ginger, sliced
  • 3 tbsp Sichuan peppercorns
  • 2 tbsp chili bean paste
  • 2 tbsp soy sauce
  • 1 tbsp Chinese cooking wine
  • 1 tsp sugar
  • 8 oz dried wheat noodles
  • Green onions, chopped, for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the garlic, ginger, and Sichuan peppercorns. Stir-fry until fragrant.
  2. Add the beef slices and cook until browned.
  3. Pour in the beef broth, chili bean paste, soy sauce, cooking wine, and sugar. Bring to a boil, then reduce heat and simmer for 30 minutes.
  4. Cook the noodles according to the package instructions. Drain and set aside.
  5. To serve, divide the noodles among serving bowls. Ladle the beef and broth over the noodles. Garnish with chopped green onions.
