This spicy Sichuan beef noodle soup, known as 川味牛肉面汤 (Chuān wèi niúròu miàntāng) in Mandarin, is a classic dish from Sichuan Cuisine. It's a flavorful and aromatic soup with tender beef and chewy noodles, perfect for warming up on a chilly day.
Ingredients
- 1 lb beef, thinly sliced
- 8 cups beef broth
- 4 cloves garlic, minced
- 2-inch piece ginger, sliced
- 3 tbsp Sichuan peppercorns
- 2 tbsp chili bean paste
- 2 tbsp soy sauce
- 1 tbsp Chinese cooking wine
- 1 tsp sugar
- 8 oz dried wheat noodles
- Green onions, chopped, for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the garlic, ginger, and Sichuan peppercorns. Stir-fry until fragrant.
- Add the beef slices and cook until browned.
- Pour in the beef broth, chili bean paste, soy sauce, cooking wine, and sugar. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Cook the noodles according to the package instructions. Drain and set aside.
- To serve, divide the noodles among serving bowls. Ladle the beef and broth over the noodles. Garnish with chopped green onions.
